Ingredients4 Persons

4 burger buns
¼ cup crispy salad
1 avocado

LEGUME STEAK

1 can cooked chickpeas
1 can kidney beans
2 garlic cloves
1/8 cup minced fresh cilantro
½ tsp salt
½ tsp smoked paprika powder
4 slices Oddlygood Cheddar or Mozzarella

VEGAN CHILI MAYONNAISE

1/3 cup broth of canned chickpeas (already cooked)
¾ cup olive oil
2 tsp white wine vinegar
½ tsp salt
ground black pepper
1 - 2 tbsp sriracha sauce

MARINATED RED ONION

1 red onion
1 tbsp Balsamic vinegar

Instructions

  1. BEAN BURGER

  2. Save some of the chickpeas broth for the mayonnaise. Drain the rest of the broth from the chickpeas and beans.
  3. Puree all ingredients for the burgers in the blender. Let it puff up for half an hour before cooking it.
  4. Make four burgers and cook them on medium heat with oil, till the burgers brown on the top. Place the cheddar slices on top of them after turning them.
  5. VEGAN CHILI MAYONNAISE

  6. Measure all the mayonnaise ingredients using a high container. Gently emulsify the mayonnaise from bottom to top with the hand blender until it thickens.
  7. MARINATED RED ONION

  8. Slice the onion. Stir in the balsamic vinegar and let it season for a short while.
  9. ASSEMBLING THE BEAN BURGER

  10. Toast the buns in the toaster, in a dry pan or in the oven. Overlay the fillings between the buns.

  12. You can store the remaining mayonnaise in the fridge for a week.
