1 lb prepared pizza dough
2 Tbsp olive oil, divided
3 cups assorted wild mushrooms
1 large garlic clove, minced
1 tsp dried thyme
3 Tbsp dry white wine
2 cups spinach
¼ cup
White Sauce, see below
Caramelized onions, see below

Caramelized Onions

1 white onion, cut in half and sliced thin
1 Tbsp olive oil
Pinch sugar
Salt

White Sauce (serves 2 pizzas)

2 Tbsp olive oil
4 garlic cloves
1 ½ cups coconut cream
2 Tbsp nutritional flakes
¼ tsp oregano
¼ tsp black pepper
½ tsp salt
2-3 Tbsp flour

Instructions

  1. Begin by preparing the caramelized onions and white sauce.
  2. Caramelized Onions

  3. In a large, heavy-bottomed pan add about 1 tbs each of butter and oil and the onions. Sprinkle with salt, toss to coat and spread out evenly in the pan. Turn the heat to medium-low and let the onions slowly caramelize. The caramelization process will take at least 45 minutes.
  4. Stir occasionally to prevent the onions from browning too quickly. It’s important that the onions slowly brown. You may have to turn the burner down to low, depending on your stove. If they are browning too quickly add a splash of water to the pan and stir the onions.
  5. After about 15 minutes add a pinch of sugar. You also may need to add a little more oil to the pan if the onions start sticking to the bottom of the pan. Continue to stir the onions and scraping up the brown bits on the bottom of the pan until they develop a nice, deep brown color.
  6. White Sauce (serves 2 pizzas)

  7. In a small pan saute garlic in olive oil over medium-low heat. Cook for 1 minute or until garlic becomes fragrant. Add coconut cream, oregano, nutritional flakes, salt and pepper. Turn heat up to medium and cook for 5 minutes. Turn heat down to low. Slowly add flour 1 Tbsp at a time and whisk until sauce becomes thick.
  8. Pizza

  9. Meanwhile preparing the caramelized onions and white sauce, in a large pan heat 1 Tbsp olive oil to medium. Add mushrooms and cook until golden brown, about 10 minutes. You may have to do this in batches to ensure mushrooms brown. Add garlic and thyme, cook 1 minute longer, or until garlic is fragrant. Deglaze the pan with white wine. Cook until wine is evaporated. Remove mushrooms from pan and set aside.
  10. In the same pan heat 1 Tbsp olive oil to medium. Add spinach and saute for 3-4 minutes or until just wilted.
  11. Preheat oven to 425 degrees.
  12. Roll out dough on a lightly floured surface. Using your hands work the dough with your fingers, holding it up and stretching to achieve a round shape. Press down gently along the surface to prevent bubbling. Transfer dough to a pizza stone or use the back of a baking tray.
  13. Add a thin layer of sauce around leaving ½ space around the edge. Sprinkle Oddlygood mozzarella evenly over sauce, followed by mushrooms, spinach, and caramelized onions.
  14. Transfer to oven and bake approximately 20 minutes or until crust is golden brown.
