Cheesy pasta bake

Ordinary pasta feels more festive when you gratinate it in the oven. If you cannot find shiitake mushrooms at the store, you can add portobello mushrooms, chanterelles or white button mushrooms. Or replace mushrooms with zucchini.

Ingredients2 Persons

½ lb Fusilli pasta
4 oz Shiitake mushrooms
1 small Onion
2 - 3 garlic cloves
2 oz Baby spinach
1 can (14 oz) Tomato sauce
5 oz Oddlygood Mozzarella or cheddar shredded


Olive oil


  1. Cook the pasta in salted water until al dente.
  2. Slice the mushrooms, the onion, and the garlic cloves. Sauté in a pan with oil.
  3. Mix all the ingredients in a baking dish and sprinkle the shredded Oddlygood cheese on top.
  4. Place it on the middle-top shelf of the oven heated to 425 ºF and let the pasta bake for 15-20 min.
